THAI CHICKEN CAKES

YOUR LIVER WILL LOVE THESE HEALTHY CHICKEN CAKES!

 

Love your liver! If your liver works well, you’re lucky. The liver is the body’s powerhouse and is responsible for clearing used hormones, balancing blood sugar levels and converting fat into energy – a key to weight loss. It’s the body’s filter and helps remove fat-soluble toxins.

Assist your liver by eating foods that contain sulphur compounds, including onions, garlic, cabbage, broccoli, kale and brussel sprouts.

INGREDIENTS

coconut oil, for greasing

500g skinless chicken thighs fillets, roughly chopped

2 garlic cloves roughly chopped

large handful of baby spinach

2 tsp wheat-free fish sauce or tamari

3 tsp coconut cream

1 tsp chopped ginger

METHOD

Preheat oven to 180C and grease eight holes of a muffin tin with coconut oil.

Place the chicken, garlic, spinach, fish sauce or tamari, coconut cream and ginger in food processor and pulse until well combined but not entirely smooth. A little texture is good!

Spoon the mixture evenly into the prepared muffin  holes and bake  for 15 minutes or until firm. Cool in the tin for a few minutes, then turn out onto a wire rack.

Serve hot or cold with a green salad or Asian slaw.
